 Rice vermicelli,a kind of special snack, is very popular in southern China.  It is featured with high resilience and flexible in texture.It won`t paste in boiling soup and not easy to break.Seasoned with various condiment such as fried meat,shrimp,egg,and vegetables,no matter by poaching or flying,it is smoothly tasty and nourishing.

Cooking instructions:

Saute:Soak thoroughly the rice vermicelli in hot water for about five minutes and then take it up;fried meat in dices or cubes together with shelled shrimps,mushrooms or vegetable in boiling oil;then put in the wet rice vermicelli and stir fly them for another two minutes.It may also be seasoned with tomato sauce,chilli sauce or mustard sauce,if preferable.

Cooked in soup:Boil the rice vermicelli in flavored soup for a few minutes and add condiments before being served.

Rice Vermicelli salad: put the rice vermicelli in boiling water for one minute,then fish it out of the boiling water and putt them in a bowl,and then add the sauces and seasonings before being served
