Artichokes are to originate and be prepared from clean sound crop. After harvest, the young, tender
and Healthy artichokes without hard external leaves, well shut central leaves, not a lot violet leaves inside, without beginning of lignifications, completely edible and tender leaves, to be graded, left to oxidize and cut to the specific width of piece **2.5cm and a specific height **5 cm.
From the time of grading, peeling and cutting, artichokes has to be kept in a light acidic medium to
maintain its color and avoid oxidation, while the time from receiving to the end product shall not exceed two hours span.
Good agricultural and manufacturing practices are to be applied. The product manufacturing and
agricultural practices should involve the use of any additives what so ever.
The product must not be obtained or manufactured directly or indirectly with the aid of Genetically
