Product Description

It is a top quality olive oil with fine features. It is cold-extracted and concentrates in it the particular climate conditions of each year. The majority of the fruit is derived from the Kolovi (Olea europaea var. pyriformis) variety trees encountered almost exclusively in Lesvos and the remaining approx. *0% from trees of Adramitini (Olea europea var. media subrotunda) variety. The olive trees are grown in accordance with the strictest rules of organic farming, without the use of chemical fertilizers, guaranteed by internationally recognized certification houses.

A cultivation of this type is based exclusively on the use of organic materials and on practices that fully respect the ecosystem and the biodiversity of the olive grove. The olives that will provide us with this type of olive oil are harvested carefully from the trees at the beginning of each period and then meticulously selected in order to be ground on that very same day in our up-to-date oil mill. The result is a golden-green oil of particularly low acidity (0.**0.7), characterized by a fruity flavor and the particular delicate aroma of fresh grass. This oil is intended for the most demanding consumers, those who are not willing to make any compromises on quality.

It is recommended for dishes of all types that require the flavor of fresh oil.
