Spirulina,“best food for the future” (United Nations World Food Conference, ***4), is a microscopic plant that grows in alkaline water. This microorganism is amongst the first living organisms, appearing over 3 billion years ago, and displays the most fascinating nutritional properties of any food on earth. 

Spirulina is very high in protein, very low in calories and cholesterol, and high in enzymes, minerals (iron, calcium, sodium and magnesium), and phenolic acids, which have antioxidant properties. (FAO) 

Although grown in many countries around the world, it is in African lakes that Spirulina has grown naturally for many millennia. It traditionally forms a daily part of the diet for communities around Lake Chad where it is referred to as ‘Dihé’ and where it grows naturally, just as it does in many of the alkaline lakes in Kenya’s Rift Valley.

Spirulina is an excellent addition to any supermarket, since many health-cosncious consumers, who look for the product, also do the rest of their shopping in the same store.
