Inulin is a
reserve polysaccharide in plants, mainly derived from
plants, and more than *6,**0 species have been found,
including *1 families of dicotyledonous plants, such as
Asteraceae, Platycodonaceae, Gentian family, and lilies
and grasses in monocotyledonous
plants. For example, jerusalem artichoke, chicory
tubers, the roots of tianzhu peony (Dali
chrysanthemum), and the roots of thistle
are rich in inulin, of which jerusalem artichoke has
the highest content of inulin.
