CMC (Sodium Carboxymethyl Cellulose; Cellulose Gum; or Modified Cellulose) occurs as a white to cream colored powder or as granules. The powder is hygroscopic. It readily disperses in water to form colloidal solutions. It is insoluble in most solvents. A 1:**0 aqueous suspension has a pH between 6.5 and 8.5.

food industry as Thickener; stabilizer.
