Pullulan is a polysaccharide polymer consisting of maltotriose units, which is produced from starch by the fungus Aureobasidium pullulans. It is biologically non-toxic to human and was certified as GRAS in the US.

The main commercial use of pullulan is to manufacture edible films for oral hygiene products and capsules for drugs. In the food industry the compound is used as a thickening agent and a freshness agent. Its thickening activity is thermal-stable, pH-stable and acid/alkaline-stable. It is also added into cosmetics like hair spray and facial mask.
