CMC (Sodium Carboxymethyl cellulose), also known as
cellulose gum, is a cellulose ether obatined by reacting
alkali cellulose with monochloroacetic acid and/or sodium
monochloroacetate. During reaction, some hydrogen atoms
(out of the 3 hydroxilic groups in each ring) are
substituted to form the sodium carboxymethylcellulose.
For food and pharmaceutical applications, by-products
obtained are sodium chloride and sodium glycolate, which
have to be washed out with solvent solutions in order to
obtain a highly purified sodium CMC.
