Description:
Chitosan is a linear polysaccharide composed of randomly distributed β-(**4)-linked D-glucosamine (deacetylated unit) and N-acetyl-D-glucosamine (acetylated unit). It is made from shrimp/prawn shells.
Chitosan has a number of commercial uses. In winemaking it can be used as a fining agent, also helping to prevent spoilage. Chitosan has a strong positive charge helps it bind to fats and cholesterol and initiates clotting of red blood cells. It can also be used as a food additive or health supplement.

to bind to negatively charged surfaces such as hair and skin which
makes it a useful ingredient in hair and skin
