Description:
It is white or colorless rhombic crystalline or prismatic crystal. Its easily soluble in water, but insoluble in ethanol. The relative density is 1.*3 and melting point is *4.6℃. If heated to **0℃, it may lose crystal water and convert to anhydrous.

Application:
1. Used as agent for baking to avoid oxidation stain and as emulsifier in dairy product to prevent egg white from solidification. It is also used as emulsifier and chelating agent for solid drinks.
