Product Description
A very cost-effective, high-concentration Alpha-amylase fits to maltose and high maltose production. 

DESCRIPTION 
FAA***0 is made from Aspergillus oryzae var through submerged fermentation and refining extraction technique. It can be used for starch liquefaction and saccharification to produce maltose and glucose. It is an endoamylase rapidly hydrolyzes the interior α *1, 4 glucosidic linkages of gelatinized starch, amylose and amylopectin solution and produce soluble dextrin and a small quantity of glucose and maltose. It also produces syrups of high maltose and a small quantity of glucose if the reaction lasts for longer. It is applied to maltose, beer brewing, food baking, etc.

EFFECT OF TEMPERATURE 
Optimum temperature ranges from *5 to *5º C; Effective temperature range *5 to *5º C. 
Optimum temperature is *0º C. 


INACTIVATION 
Inactivation can be achieved by raising the temperature to *0 to **0 º C for 5 to *0 minutes. If the content of starch is higher, this product can be inactivated by keeping the temperature at *0º C for about *0 minutes, or *0 º C for about *0 minutes. If inactivation by high temperature is not desirable, another option of inactivation is to decrease the pH below 4.0. Inactivation can also be realized by adjusting pH and temperature at the same time. 

INHIBITORS 
Copper and lead ions are strong inhibitors. Zinc, nickel and iron ions are moderate inhibitors. 

SUBSTRATE 
FAA***0 fits to saccharify corn, potato, tapioca, wheat, soyabean and starches from other resources. It hydrolyzes effectively if the content of starch is less than *0%(DSB). 

DOSAGE 
Dosage depends on the desired maltose content in the final syrup and the saccharification time available. Typical dosage of FAA***0 is 0.*5 to 0.*5 kg/TDS.
