Gardenia black pigment, a purely natural and water-soluble pigment, is extracted from the fruit of gardenia that is planted locally. The main manufacturing processes are checking, washing, slicing, extracting, isolating, filtrating, purifying, concentrating, sterilizing, spraying and drying. The main ingredients are Crocin and Crocetin. Its powder color is black and will rarely change while the PH varies. The pigment’s water solution is stable under heat and light.

Characteristic: Its powder or liquid color is black and it does not dissolve in oil, but is easily soluble in water solutions. In particular, this color appears as brownish black from PH4 to PH8.

Application: Gardenia black pigment is widely used in food, beverages, and seasonings such as soy and vinegar.

Usage: It can be dissolved in water solution and water-based media. The amount should be better limited to between 0.*2% and 0.1%.
