INTRODUCTION
Proteins are among the most complex organic compounds found in nature. They are made up of nitrogen containing compounds known as amino acids. During the digestion of proteins, hydrochloric acid and proteolytic enzymes break down the intact protein molecule into amino acids which are then absorbed through the intestinal wall in higher organisms and cell membrane in microorganisms.
Every animal, including humans, must have an adequate source of protein in order to grow or maintain itself. Proteins, which yield amino acids, are the fundamental structural element of every cell in the body. Specific proteins are now recognized as the functional elements in certain specialized cells, glandular secretions, enzymes and hormones.
Proteases refer to a group of enzymes whose catalytic function is to hydrolyze (breakdown) proteins. They are also called proteolytic enzymes or proteinases. Proteases play a critical role in many physiological and patho-physiological processes. Proteases find extensive applications in the food and dairy industries.
DESCRIPTION
SUKAPro NE is a protease enzyme preparation active at neutral pH ranges and obtained from the submerged fermentation of a high protease-producing Bacillus strain. The product can be used in the industry of leather softening and depilation, silk degumming, plant and animal proteolysis, brewing and feedstuff.
WORKING MECHANISM
The proteolytic enzyme preparation in SUKAPro NE can break down the peptide bonds in the protein foods to liberate the amino acids or polypeptides in neutral pH condition. Haze in the fermentation broth will be clarified by adding neutral protease in the production of alcohol, wine, ratafee, beer, butter and soy. Yeast growth during the fermentation stage is improved by the conversion of suspended proteins into amino acids resulting to a higher fermentative speed and yield.
PROPERTIES
SUKAPro NE provides maximal benefit at pH 6.**8.0 with optimum at pH 7.0 and at the temperature range of *0℃**0℃ (*0 ***0°F) with optimum at *0℃ (**2°F).

Unit definition: The amount of enzyme needed to liberate 1 μg tyrosine in one minute at pH of 7.0, at the temperature of *0℃.
APPLICATION GUIDE
For use as a feed additive, SUKAPro NE can be added to the mix at a rate of ***0 U/g.
For use in the brewing process, add SUKAPro NE at the rate of 5 U/g.
PACKAGING
SUKAPro NE in liquid preparation is packaged in *2 kg/plastic drum.
Alternative packaging is available upon request for smaller or larger volumes.
STORAGE
Store in a cool, dry place and away from direct sunlight. SUKAPro NE maintains its activity for considerably longer time when stored at lower temperatures (below *5°C). The product should not be frozen.
HANDLING PRECAUTIONS
SUKAPro NE is non-toxic and biodegradable. However, unnecessary contact with the product should be avoided. Long term exposure to protein based products such as SUKAPro NE may sensitize certain individuals to the product. Wash hands with warm soapy water after handling. Keep out of reach of children.
