The location has been one of the first to be announced Protected Geographical Indication (PGI) that guaranties the high level of quality of the olives as well as the typical and special scent of the oil produced. Combining the unique raw material (the olives), we have built an establishment that complies with GMP and IFS standards and has certifications as BSI-PAS **0:***8 and FSSC ****0, some of the strictest in the world. This way, the unique scent and quality of the olives, grown in the privately owned fields, is transformed to one of the best existent premium extra virgin olive oil in the world. Our chemical analysis is certifying the above. The olives are being gathered in a non mechanical system (by hand) and are squashed in our olive press within *0 hours from the gathering and through "cold extraction" process, even 3 degrees below the accredited level of temperature. Also, the oil when it is tanked stays for about *0 days to self-filter and bring up all the particular flavors it contains without losing any of the valuable substances that are lost with chemical filtering.
