The cocoa bean (technically cocoa seed) or simply cocoa is the
dried and fully fermented seed of the cocoa fruit. The botanical
name of cocoa is Theobroma cacao, from which cocoa solids
(a mixture of nonfat substances) and cocoa butter (the fat) which
can be extracted. Cocoa beans are the basis of chocolate, and
Mesoamerican foods including tejate, an indigenous Mexican drink
that also includes maize.
Our cocoa beans is of best quality with 4 to 5 days of fermentation
which produces an optimum temperature of around ****7°C, pH around
**5.4, total acid around 0.*0%. Our cocoa beans is with a physical
appearance and colour that is bright enough, fat content around
*0.*5 %, and the water content is quite low around 4.*7%.Our cocoa
beans is gotten from a hybrid cocoa with a pleasant aroma. Very
wonderful for making chocolate.
