1.PGA is a kind of new type of food additive, manufactured from alginic acid extracted from natural seaweed through intensive processing. It is white or light yellow powder, flavorless or a little fragrance. It is soluble in water and form gelling solution. It is insoluble in organic solvent ethanol.
2.Besides its thickening property, PGA has function of surface active agent, used as emulsifier and bubble stabilizer. It has stabilizing function for greasy colloid and it is acid resistant. Because PGA is nonionic compound, it is stable for some metal ion, which can not make solidification and separate out.
